Breakfast: four oatcakes, tea, a hand-full of Blueberries, and a hand-full of cashews (not pictured)
Lunch: peas from last night, blueberries, an orange, and..oh yeah... more oatcakes! (What can I say, it was a goooo-ooo-oooood recipe!)
Snack: mmmm... Maybe another oatcake or two. ;) What!??! They're SoooOSOOOOOOSOSOoooooo good!
Din-Dinns: baked potatoes! (And that's a frosty glass of water there to the side, you observe.)
And for dessert: banana soft-serve! (Did you know that if you blend frozen bananas for about 5 minutes, they take on the consistency of soft-serve ice cream? It's suuuuper delish! And I just added a little home-made chocolate sauce to taste. Side note: do NOT try to make chocolate sauce in the microwave. it ends up boiling over and making a mess. Best to do this on the stovetop like in the good ole reliable olden days.)
Whew! Can you believe that after all that preparing, I still felt the baking itch? I did! So I made some granola. Isn't it perty?! I tried this new recipe. I like the consistency better. Crispety and crunchety. Perfect breakfast cereal. Next, I want to find a good banana bread recipe and see how I can tweak it to be clean and vegan.
I've gone a bit mad with baking lately, haven't I? Sort of like Betty Crocker, but way not. I more like this kind of Swedish Chef.
